A local bakery in Jenks, Oklahoma, Esperance has perfected the art of the croissant. Owner and head baker, Hope Alexander, uses layers of the highest quality butter and flour to create a seasonally changing range of french breakfast pastries and desserts in her shop- and many feature Grassroots Ranch eggs, sausage, chorizo, and bacon. Farrel Family Bread uses flours that are always untreated, unbleached, contain no preservatives, artificial coloring, or sweeteners. The miller they use gently grinds the grains, preserving many of the nutrients. They receive the flour within days of milling and store it in their freezer to maintain nutrient value and freshness. Their dough is minimally mixed, hand-shaped, and slowly fermented at cool temperatures to develop complex flavor and structure without added sugar or artificial flavoring agents. Their hearth oven injects live steam during baking to ensure a crispy and caramelized crust, baked fresh every morning. Gibson Gardens, a 10-acre produce farm in Bixby, Oklahoma started out as just that- a garden. In the words of Randall Gibson, "the tomatoes just tasted so much better than anything store bought that I just thought, 'heck- people would buy these.'
