Denver steaks are cut from the under blade portion of the chuck roll. This cut has excellent marbling and since it is so close to the blade, it receives less work than most of the surrounding muscles resulting in a tender piece of meat. This cut is more uncommon and requires a skilled butcher to perfect.


Best cooked over high heat on a grill or in a pan. Make sure to let this steak rest and cut against the grain for optimal tenderness.
