But have you ever stopped to think how important that single plant cycle is to a grass-fed beef operation such as ours? "Old ways won't open new doors." —Unknown Say hello to our new doors! After taking down a wall and rearranging the layout of the space, we discovered that the previous entrance just didn't make much sense. So we switched it up. Before, the entrance was a single door to the far left. Now, the entrance is centered and has a double door. Sometimes, it's the small changes that make a big difference.

Infrastructure isn't a thrilling topic of discussion, but it is certainly necessary for the equipment and plans we have for this space. It may not look like much now, but we are so excited about the progress being made. Our focus on local ingredients, sustainability, and regenerative agriculture will extend to each facet of the store and the bakery will be no exception. Our breads will harken back to the time before nutrition and flavor were stripped away in favor of quick, easy, and full of preservatives.

Let's talk about our bakery! When you walk into the store, the bakery will be in the back of the space on the second floor, with a section of the wall being glass so that you can see Chef Trey and his staff baking away! In these photos, you can see how it is shaping out. In the first photo, the space left out in the framing will be filled in with glass, so you can see what's baking. In the second photo is the wall where our ovens will be. There used to be a walkway into the other room that we are closing up. We hope you all are as excited about this bakery as we are!

Attending to the orchard is still ongoing. There are 140 acres of beautiful majestic pecan trees that are in need of some love. Daniel has spent a lot of time in the orchard clearing out the labyrinth of saplings growing throughout. We are not exactly sure how long the orchard has been ignored, but that time is no longer. After being here for just over a year, we are on a mission to give it the love it deserves.

Construction at Larder this week has been coming along great. We have worked on bringing the current kitchen back up to code. We have started ordering baking equipment, alongside our refrigeration needed for the store. This week has been huge on getting electrical all up and ready to house light fixtures and all of our other needs. Every week and every task completed, we are just one step closer to opening the doors!

Zach is our newest member of the Grassroots Team! Here he is posing with one of our many ranch mascots, Napoleon. You will be seeing a lot of Zach as he will be an essential staple at Grassroots Larder! Zach is from Tulsa, OK, and enjoys adventuring, reading/writing, and hanging with his pals. He has spent many years in the local restaurant scene, doing everything from serving, bartending to management at some of Tulsa's busiest spots. He even dipped his toes into distilling for a bit.
